I remember I couldn't believe it when I tasted this batch out of the barrel, 2003 had been such a hot year with freak temperatures and I was expecting a foward upfront fruit lead wine. What I tasted was very similair to the previous year's barrel sample.. I was gob smacked, it was tight closed and very typical of what the barrel should have tasted like on a normal year, given the early stage in the wine's development.
Henri Boillot, adpoting a New World technique had carried out a cold fermentation to just 8 degrees centigrade, where normal red grape fermentation will reach temperatures of up to 30 degrees!

Henri Boillot's wines are fast becoming some of the most sought after wines in Burgundy . This is stunning, rich, balanced voluptuous Pinot fruit, with depth and tannin structure.

Cellarman's comment: The best red wine list anywhere would not be complete without this wine.
